Thanksgiving has got to be the biggest offender. Did you know that a Thanksgiving dinner with all the trimmings can be over 4500 calories? Yikes! Believe it or not, there are ways to cut a bunch of calories out of that turkey feast, without losing any of the delicious flavor. I will be sharing my lower calorie recipes for Thanksgiving goodies every week between now and Turkey day. I have lower calorie recipes for mashed potatoes, cranberry sauce and even green bean casserole! Make sure to come back every week and collect them all, but keep them under your hat; they are so delicious, no one will ever know you shaved off a bunch of calories!
Let's start at the end.......dessert! I've made this pie for the last two years on Thanksgiving and no one has noticed the change. It is still delicious, with full flavor, and looks the same. Try it out on your family and see if they can tell the difference between my low cal pumpkin pie and regular pumpkin pie.
Ingredients: 16 ounce can of pumpkin 13 ounce can evaporated skim milk 1 egg 2 egg whites 1/2 cup Bisquick 2 tablespoons sugar 8 packets sugar substitute, (16 teaspoons or 1/3 cup) 2 teaspoons pumpkin pie spice 1/2 teaspoon nutmeg 2 teaspoons vanilla 1 premade or homemade pie crust |
Preheat oven to 350 degrees.
Spray a 9 inch pie pan with cooking spray and put in the pie crust
Place all ingredients in blender, food processor or mixing bowl.
Mix one minute with a mixer or vigorously stir for two minutes by hand.
Pour into pie crust and bake for 50 minutes or until center is puffed up.
Cut into 8 pieces, each will be about 125 calories.
