Preheat your oven to 350 degrees
Spray a 8 x 8 glass baking dish with cooking spray
Drain the liquid from the peaches and put in a mixing bowl
Add cornstarch to the liquid and stir until smooth
Add bread cubes, milk, eggs, apple juice concentrate, raisins, ginger, vanilla, cinnamon, nutmeg and salt
Mix well, but gently
Chop the peaches small and stir them into the mixture
Spread the mixture into the glass pan
Bake for approximately 35 minutes
Serve hot or cooled with ice cream or whipped cream
The great thing about this recipe is that it is made with canned peaches, which means you can make it any time of year, easily and inexpensively. Easy, cheap and delicious, what could be better than that?
