Ingredients:
- 4 c. left over mashed potatoes
- 1 med onion chopped fine
- 2 eggs
- ½ c. sour cream
- 1 c. flour if mix seems thin add ¼ c. more flour mixing well.
- Salt and pepper to taste
- Butter to fry with.
Directions:
Mix everything but the butter in a large bowl.
In a skillet on medium heat melt 1 ½ teaspoons butter.
Drop 2 heaping teaspoons into the butter and flatten and shape to make a patty
Brown on both sides.
Serve hot with butter or condiments.
I prefer to eat mine with sour cream and chives, the hubby prefers them brushed in butter or sometime with ketchup. There are tons of ways to eat these. If you want to cut down on the calories, you can substitute the sour cream for the fat free variety, and fry them in olive oil instead of butter.
