I have had very little time to do much of anything since they have been sick, but I did make a big crock pot of tomato soup so we could have something nutritious to eat, even if we did not feel like eating. I thought I would take a moment to share the recipe with you all before I go back to nurse-maiding my little furbabies.
Ingredients:
1/4 cup chopped onion
1 stalk of chopped celery
1 teaspoon garlic powder
1 teaspoon Italian seasoning (oregano and basil)
1 teaspoon salt (to taste)
1/4 cup sugar
1/4 teaspoon pepper
2 quarts strained tomato puree, or tomato juice
Directions:
Turn crock pot on low and put 1 quart of tomato puree/juice in and cover
Put onion, celery, seasoning, garlic powder, salt, sugar and pepper in a blender with the remaining quart of tomato puree/juice and blend until the consistency is totally smooth.
Pour the contents of the blender into the crock pot and stir till well mixed.
Cook for 6 to 8 hours or until the soup is the consistency you prefer it to be.
To serve, I stir a tablespoon of cream (butter also works) into the bowl and sprinkle grated cheese and fresh chopped parsley on top, and serve with crackers or biscuits.
