Not a whole lot more needs to be said about why I prefer to make my own. Jif is actually one of the better peanut butters, many of the other brands still use high fructose corn syrup.
There really is no reason not to make your own peanut butter, it is so easy. All you need is a food processor or strong blender, and three ingredients.
Ingredients:
2 pounds of raw pre-blanched peanuts, without skins
3 tablespoons of peanut oil or olive oil (may need more)
2 teapoons unrefined natural salt or sea salt (may need more)
Directions:
Preheat oven to 350 degrees
Spread peanuts on a cookie sheet (or two) in a single layer
Bake for 45 minutes or until nicely browned
Remove from oven and dump on a clean kitchen towel to cool
When completely cool, place peanuts in your food processor with the blade attachment
Process until the size of large crumbs (remove 3/4 cup of peanuts now, if you are making chunky peanut butter)
Add 1 teaspoon salt and process for 30 seconds
Dribble the oil in a bit at a time, scraping the sides as needed
The mixture will begin to clump and then it will form a paste
Keep adding oil until it''s gone and keep processing till the substance is smooth like thick butter (you may need to add more oil to get the proper consistency)
How smooth it turns out depends on how powerful your food processor is.
Taste and see if more salt is needed, if so add more and process for 1 minute
Scrape out peanut butter into a bowl with a tight fitting lid
Stir in the 3/4 cup of chopped peanuts if you are making chunky peanut butter
Cover and store in the refrigerator; should stay good for at least a month or more
Makes about 4 to 5 cups.
There are lots of different flavorings you can add when making peanut butter from scratch. Honey is really good, if you like it sweeter. Cinnamon is also delicious, but my personal favorite is chocolate. Just drizzle a bit of chocolate into the processor when blending and the result is heavenly!
"Homemade is healthier" is especially true when it comes to peanut butter. It's also so much tastier when it is fresh and I enjoy it more knowing exactly what is in it....no mystery ingredients!
