So if your neighbors complain about dandelions in their lawns, give them this recipe! It's much healthier than Round Up, for them and their lawns!
2 quarts fresh dandelion greens, chopped
2 quarts chicken broth
1 pound of shredded cooked chicken
1/2 cup shredded carrots
1/2 cup chopped mushrooms (optional)
1/4 cup minced onion
4 tablespoons Parmasean cheese
2 teaspoons Italian seasonings (basil and oregano)
1/2 teaspoon thyme
1 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
Thoroughly wash the dandelion greens and chop.
In a large sauce pan, place the broth, chicken, spices, salt and pepper and bring to a boil.
Add the remaining ingredients, except Parmasean cheese, and stir.
Let boil for 15 minutes
Reduce heat and simmer for an additional 20 minutes.
Serve immediately with Parmasean cheese sprinkled on top
