Ingredients:
- 1 pound of boneless, skinless chicken breasts, cubed nugget size
- 1 large egg white
- 1 tablespoon of butter, melted
- 3/4 cup seasoned bread crumbs
- 1/2 cup Parmesean cheese
- 1/2 teaspoon seasoned salt
- 1 teaspoon each of: basil, paprika, garlic powder
- 1/2 teaspoon thyme
- dash of black pepper
Mix all ingredients but butter and egg white and place in a shallow bowl
Mix butter and egg white and dip the chicken squares in this mixture and then roll them in the dry ingredients
Place each on a foil lined cookie sheet that has been sprayed with no stick spray
When all have been arranged without touching each other, bake for 7 minutes, then turn over
Bake for 10 more minutes
Serve immediately
Even my husband likes these chicken nuggets and gobbles them up when I have them for lunch on the weekends. Personally, for lunch I like to toss them in a salad with bleu cheese dressing and fresh greens and sprouts. Any way you eat them, they are much healthier and lower calorie than the ones you will find in the grocer's freezer, or (horrors!) at a fast food restaurant.
