My grandma used to make this to use up left over rice. She always used to say "waste not, want not." Back then, I had no idea what that meant, but I was happy to stuff myself with this delicious breakfast rice dish.
- 2/3 cup of cooked rice, brown or white
- 1 egg
- 1/2 teaspoon vanilla
- 2 tablespoons of raisins or craisins or other dried fruit
- 2 tablespoons chopped nut of your choice, I use pecans or walnuts
- 3/4 cup of skim milk (can use 2% or whole)
Instructions
Mix rice, egg, milk and vanilla
Microwave for 45 seconds, and stir
Microwave for 45 seconds, and stir
Microwave for 45 seconds, and stir (yep, you do this three times)
Add the fruit and nuts and stir
Serve immediately
