Today's delivery just arrived and this is it. Everything looks good, other than the Romaine lettuce, which looks a bit wilted. I placed in in the sink in some ice water to perk it up. The bananas were just ripe and ready to eat and the green pepper is also at it's peak ripeness. I have to admit, though, I have never seen such tiny sweet potatoes. It will be interesting to cook them and see how they taste. |
Red potatoes cubed large (however many you need for the amount of people eating the meal)
Ingredients
- 1/2 cup sliced mushrooms
- 4 carrots, peeled, cut in thirds
- 1 stalk celery cut on the diagonal
- 1/2 teaspoon garlic powder
- 1/2 teaspoon seasoned salt
- splash of chicken stock (or vegetable, or water)
- 1/4 stick real butter
- honey
- pinch of pepper
Preheat oven to 350 degrees
Coat a 9 x 13 glass pan no stick spray
Put all the veggies in a large bowl with a lid.
Add a generous splash of chicken stock
Cover and shake gently to wet all veggies
Uncover and add garlic powder, seasoned salt and pepper, sprinkling all over veggies
Cover again and shake gently to coat all veggies
Pour into the glass pan, including the broth
Dot with butter and cook uncovered for 30 minutes or until potatoes and carrot are soft
Remove from oven and very lightly brush carrots with honey
