What you see here is the last hurrah of my summer garden. Yesterday I picked the last of the tomatoes and peppers. Pulled the last of the carrots and onions and picked all my Stevia leaves. I pureed the tomatoes in my new Ninja Blender, (I love it!!) and strained them. After some seasoning, I poured the sauce into double freezer bags and put them in the freezer to make spaghetti sauce this winter. |
Half of the onions I plan on dehydrating and the other half I am going to chop and freeze for use in soups and stews. The peppers I plan to dehydrate all of them. I have put so many chopped peppers in the freezer this summer, I may not even be able to use them all this winter, so I think some more long term storage may be in order for this big bowl of peppers. Peppers smell good while they are dehydrating, but if you plan to put onions in your dehydrator, make sure that you put it outside. I am not kidding, the smell is pungent and VERY strong.
I am sorry to be saying good-bye to my summer bounty, but I am also looking forward to a change of activities. The focus goes from gardening outside to doing things inside; and I have a lot to do. I am planning on reducing the clutter in my house and trashing/donating at least 1/3 to 1/2 of my extraneous possessions. I am serious about simplifying and decluttering my home and my life. The time has arrived to start. But that is another post, for another time.
