Ingredients 12 ounces pasta, any style 3 medium tomatoes, seeded and chopped 3/4 cup of tomato sauce 1 large sweet onion, chopped coarsely 4 cloves garlic, grated 1/2 cup fresh mushrooms, sliced 1/4 teaspoon chili powder 1 teaspoon oregano 1 large sprig basil, chopped medium 4 cups broth, any flavor, I use beef 2 tablespoons real butter 2/3 cup mozzarella cheese (I prefer the kind with Philly Cream Cheese in it) Mozzarella cheese shreds for garnish |
Directions:
Pour broth into a large, non stick pot
Add pasta, onion, tomato, garlic, mushroom
Pour tomato sauce over mixture
Sprinkle with chili powder and oregano and a dash of salt
Dot with butter
Spread cheese over the mixture and cover
Bring the liquid to a boil and then reduce heat to medium
Cook for 12 minutes, stirring frequently to mix ingredients
Add basil
Simmer until most of the broth is gone
Stir well, but gently and serve hot
Goes great with garlic bread or fresh buttered bread sticks. If you want to add meat, Italian sausage is a great choice. I have also used meatballs and cubed pork medallions. Any meat would be good, or even shrimp or scallops.
