Today I would like to share one of my favorite cake recipes. I love almost any cake with pineapple, but if it has coconut, that makes it just about perfect. I hope you decide to try this recipe, I guarantee you will not be disappointed.

Preheat oven to 350 degrees
Spray a 9 x 13 glass baking dish
Beat cake mix, eggs, oil, water, and pureed pineapple with an electric mixer on low all ingredients are well combined
Turn mixer to high and beat for 2 minutes
Sprinkle a small amount of brown sugar over the bottom of the glass dish
Place pineapple rings evenly on the bottom of the dish
Melt butter, brown sugar and lemon juice in a pan and stir until dissolved
Pour the brown sugar mixture over the pineapple rings
Sprinkle coconut over brown sugar mixture, making sure to fill in the ring holes of the pineapple rings
Pour cake batter on top of the coconut
Bake uncovered for 35-40 minutes or until a knife inserted comes out clean.
Remove from oven and cool for 5 ot 10 minutes
Place the serving platter upside down on top of the cake and flip over; the cake should come out easily
I serve mine with low calorie vanilla frozen yogurt, and a sprinkle of chopped pecans. It is delicious!
