I am also including the recipe for my mom's butter cream frosting that is the best frosting you will ever have in your mouth, guaranteed. You can color it red or pink for Valentine's day, but in it's basic form, it is a beautiful snowy white. Make sure to save this frosting recipe, it is the one you will be using for the rest of your life. :)
Red Velvet Cake from Scratch Ingredients:

Preheat oven to 350 degrees.
Grease two 9-inch heart shaped or round pans. (mom rubbed them with a stick of butter)
With an electric mixer beat shortening and sugar until well combined and fluffy.(not grainy)
Add eggs one at a time and beat for one minute.
In a small bowl, mix cocoa and red food coloring and add to items in mixing bowl.
Add vanilla, salt, buttermilk and flour to the mixing bowl, beating continuously.
In a small bowl mix baking soda and vinegar with a fork and slowly add to mixing bowl, beating slowly and stop once all ingredients are combined.
Do not over beat once the vinegar/soda mix is added!
Bake for 30 to 35 minutes or till a toothpick comes out clean.
Let cool for 5 minutes and then turn out and let cool completely before frosting.
With your electric mixer on medium speed , beat the egg white until foamy
Slowly add sugar and salt
Slowly add shortening, butter and vanilla
When well mixed, slowly add the warm milk
Beat until smooth and all the sugar is melted and frosting is no longer grainy
You MUST keep beating until the sugar is liquified and the icing is smooth!!

There are lots of ways to decorate your cake. If you have no talent for writing with icing (I can't learn to do that, I have tried) use heart shaped sprinkles and heart shaped chocolates. Once year I made a ring around the outside of the cake with chocolate covered cherries and sprinkled the rest with red heart candies! That was definitely a hit. |
