The kale was a beautiful green with nice shiny leaves, the red pepper was beautifully sectioned. The green onions, cucumber and radishes looked like they had just been pulled as did the potatoes. YUM! The only bad thing was the totally green bananas. It will be a while before they will ripen enough to eat, however, they were nice looking otherwise.
Ingredients:
- box of pasta, any kind or shape, I am using mostaccioli
- 2 teaspoons olive oil
- 1 large onion, coarsely chopped
- 1/2 cup red bell pepper, chopped medium
- 1 large carrot, grated
- 1/2 cup fresh mushrooms, sliced
- 2 cloves garlic grated small
- 1 bunch of kale, chopped medium small, stems removed
- 1/2 cup Parmesan cheese, plus enough to sprinkle on top
- 1 1/2 cups tomato sauce
- 1/2 cup tomato paste
- 1 tablespoon Italian seasonings like basil, oregano and parsley
- 1/4 teaspoon red pepper flakes
- 1 1/2 cups meat of your choice, I am using meatballs, but sausage is also good
- 1 teaspoon salt
- 1/2 teaspoons black pepper
Instructions:
Preheat oven to 350
Prepare pasta per usual, and drain, then return to pot
Saute pepper, onion, garlic, mushrooms and carrot in olive oil until softened
Add chopped kale to the skillet and stir until mixed
Turn off the heat under the skillet and cover, letting sit for 5 or 6 minutes
While that mixture is sitting, add Parmesan cheese and pepper flakes to pasta and stir
Add the kale mixture to the pasta and season with salt, pepper and Italian seasonings
Add the meat and stir until well mixed
Pour into a cooking sprayed 13 x 9 glass pan and sprinkle generously with Parmesan cheese
Bake about 30 minutes until bubbly and the cheese on top turns golden
