Today I am going to share with you one of my favorite cookie recipes. I got this recipe from a friend of mine when I was in college, but somehow it got lost along the way. Then three years ago, when I was preparing to move, I ran across this recipe in a box of photos from college. I decided to give it a try and I made them that afternoon.
Heavenly Chocolate Cookies with Cashews

Directions:
Preheat oven to 375 degrees and spray a baking sheet with cooking spray
Melt butter in a small bowl in the microwave
In a mixing bowl whisk together flour, cocoa powder, cornstarch, baking soda, and salt
Add butter to the dry ingredients and stir until completely combined
Add the egg and vanilla
Mix in the semi-sweet chocolate chips and when combined, add the cashews
Stir mixture until it is completely incorporated
Roll cookies into balls about the size of a quarter
Drop them on the cookie sheet and mash with a wooden spoon till they are about 1/3 of an inch thick
Bake for 8 minutes. Or until the tops of the cookies have set.
Remove from oven and let cool on baking sheet for a few minutes
Remove from the baking sheet and let cool the rest of the way on a cooling rack
Store in an air tight container, makes about 20 cookies
Next time you need to bring something for your childs school or to a party, bring these cookies, I guarantee they will be a huge hit.
