I love teriyaki sauce! It is so delicious on chicken, beef, pork, rice, even vegetables! It adds a savory/sweet tang that I find so appealing, I use it a lot. I really prefer the thicker variety over the kind that has the consistency of soy sauce. Unfortunately, the thicker variety is also more expensive, it seems the things I like are always that way! So one day I wondered if I could make my own, so I could make it the way I like it. I was afraid it would have some weird ingredients so I did some research on the internet and I ran across several recipes, and to my relief, the ingredients were all things I usually have in my house anyway. After some experiementation, I found the perfect recipe.

- In a medium sized pot, combine water, soy sauce, brown sugar, honey, ginger, and garlic on medium heat.
- Cook until the mixture nearly heated through, about 1 to 2 minutes.
- In a cup, mix cornstarch and water and stir until completely dissolved.
- Add cornstarch mix to the saucepan and stir until sauce is thickened, 6 or 7 minutes
If you prefer your sauce thicker or thinner than mine, you can adjust the amount of cornstarch and the time you heat it. You can adjust other things to make it more to your liking, if this recipe does not do it for you. If you like it sweeter, add more brown sugar, if you want it more tart, add more vinegar. If you want more salt, add more soy sauce, but be careful, soy sauce is VERY salty.
This sauce is so much better than the store-bought variety, the only thing that is important to remember is that because it has no chemicals or preservatives, it only stays good for a week to ten days. But at only ten minutes to make, it is almost no trouble to whip up a fresh batch when you need it.
