Everyone is lookind for a way to stretch the food budget these days, this recipe is great for that, it is delicious with meat or without! Everyone thinks that Chinese food is hard to make. It really isn't! This recipe is so simple to make and does not take any weird ingredients that you have to go to an ethic food store to buy. Just plain old veggies and easy stuff you probably have on hand already, other than maybe the pea pods and if you don't have them, just leave them out! I promise the lo mein police will not come knocking on your door. :) Who doesn't love crockpot meals? Easy to make, and delicious to eat, I think you will find this is one of the best. I really love Mexican food, but it usually takes a lot of effort to make and serve, so I decided to try making a crockpot Mexican casserole that I could toss together and just let it cook all afternoon, and be ready to serve at dinner. This is what I came up with, and it was instantly loved by my husband, who loves Mexican as much as I do! A Low Carb Recipe Recently my doctor told me I needed to go on a low carb diet. I was not terribly pleased to hear this, since I am a big fan of carbs. However, it has to be done, so I have to embrace it. My first recipe that I tried was a real hit with the hubby. He is not a fan of rice, so I decided to forgo putting rice into these stuffed peppers, and I have to say, I liked them much better! |
