Years ago I knew a guy who was (what I then thought of as) a health nut. He used to juice everything, I used to joke that I would not remain stationary too long around him, or he would probably juice me. He was a terrific believer in vegetable smoothies, he had at least three a day. Now some of them were pretty gross, like apple, pineapple and tomato, or celery, kale and strawberries. I have always loved funnel cakes. I used to buy funnel cake mix at a cider mill every fall. Imagine my horror when I saw that the mill had closed it's doors. No more funnel cake mix. So, I decided to make my own. I did some research on the internet and tried several recipes with less than stellar results. So, through trial and error, I finally came up with a recipe for a mix of my own that is really good. It's also easy to make and prepare and kids love it! Today I am going to share with you one of my favorite cookie recipes. I got this recipe from a friend of mine when I was in college, but somehow it got lost along the way. Then three years ago, when I was preparing to move, I ran across this recipe in a box of photos from college. I decided to give it a try and I made them that afternoon. I love teriyaki sauce! It is so delicious on chicken, beef, pork, rice, even vegetables! It adds a savory/sweet tang that I find so appealing, I use it a lot. I really prefer the thicker variety over the kind that has the consistency of soy sauce. Unfortunately, the thicker variety is also more expensive, it seems the things I like are always that way! So one day I wondered if I could make my own, so I could make it the way I like it. I was afraid it would have some weird ingredients so I did some research on the internet and I ran across several recipes, and to my relief, the ingredients were all things I usually have in my house anyway. After some experiementation, I found the perfect recipe.
I love Rotel tomatoes and chilies. I used to use them all the time to make queso, or enchiladas, or even chili. I love the spiciness! I use the mild because my husband does not like hot things, but I have used the medium before when making dishes to take to a pot luck. They are quite a bit hotter; I have always wondered how hot the "Hot" variety was!
Anyway, I got tired of paying the high dollar for Rotel, and I thought I would try making my own. At first I just put tomatoes and jalapenos in the mix, but it did not taste anything like Rotel, so I started experimenting. The first thing I did was to peel the tomatoes. If you have a lot of yogurt fans in your household, then you know how expensive it can be. Little tiny cups. that any kid could eat half a dozen of. cost almost a dollar a piece. It can really eat into your budget. So why don't you make your own? It's really not that hard. Miracle Whip was invented as sweeter alternative to mayo, in the early 1930's. They originally planned to call it mayonnaise, but the FDA would not let them because it contained ingredients that they deemed were not supposed to be in mayonnaise.
