Breakfast casserole on Christmas morning has been a tradition in our household for a long time. We got it from my sister, who made it for her family long before I ever got married. It is really delicious, why wouldn't it be? Made from eggs, cheese, sausage......could anything made from these ingredients not be yummy? Of course not! The best thing about this casserole, is that it has to be made the day before! This virtually guarantees a Christmas morning that is cooking free, what could be better!

Preheat the oven to 350 degrees Spray cooking spray in a 13 x 9 glass baking pan In a mixing bowl put the eggs, salt, pepper, and milk and wisk till combined Fry up the sausage loose in a skillet and drain Place your bread side by side and cover the bottom of the glass pan Cover bread with 1/3 of cheese Put sausage on top of cheese Put mushrooms on top of the sausage Layer another 1/3 of cheese Pour the eggs over the entire thing making sure they will soak down in the bread Top with the rest of the cheese Cover with aluminum foil and put in the refrigerator for at least 8 hours. |

This is the basic recipe with the addition of mushrooms, which is something my husband and I love. If you don't like them, don't add them. There are many things you can add, or change, depending on what you like. Something as simple as changing the bread to pumpernickel, or rye can give the casserole a whole different taste. Adding peppers and onions, or even a bit of salsa can really spice it up. This casserole is really very versatile, if you don't have sausage, you can use spiced hamburger, or crumbled bacon. Basically any type of meat, as long as you precook it. You can also change the cheese. I use American, but you can also use mozzarella or even pepper jack. Be creative!
On Christmas morning, you simply turn the oven on to 350 degrees, remove the casserole from the refrigerator and slide it into the oven, leaving the aluminum foil on. Set the timer for 30 minutes. When the timer goes off, remove the foil and set the timer for 15 minutes. When the timer goes off, just pull it out of the oven and cut squares for everyone!
