I made this soup for the first time last year and it was surprisingly flavorful. I just made it "by the seat of my pants" as my Mom used to say when she made up a recipe as she went. That is pretty much what I did and it turned out to be delicious!

Last week I made a post about How to Make a Homemade Cake Mix and how it makes the perfect jar gift. I had a reader ask me if I had any other recipes for homemade cake mixes, preferably devil's food, carrot cake and spice cake. Luckily I did have the recipes for spice cake and for devil's food, but not for carrot cake. So I looked up several recipes online and began experimenting. I came up with a good homemade carrot cake, but I am not sure I would give it as a jar gift because there are as many wet ingredients as there are dry ingredients, so I am not sure how much of a time savings it would actually offer. Actually, the devil's food is the same way, so if you want to use either of them as a jar gift, keep that in mind. The spice cake, however, has only three wet ingredients, so it would be great as a jar gift.

I really like chicken nuggets, however I had to stop buying them because the ingredients were too scary, and they were also very fattening. One day I was in the mood for some, so I decided to experiment. The version I came out with is pretty dang good, and can't be more than 10 or 20 calories each. (not including sauce) Check it out!
I have been making my own cake mixes for a long time, but I only recently started giving away the dry ingredients as jar gifts. I think gifting dry mixes is the best idea ever. It is inexpensive for the giver, and it gives the receiver the precious gift of time. They can make healthy homemade bake goods for their family without taking the time to make them from scratch. What could be better? It also shows that you cared enough to take the time to make something personal as a gift, rather than just buying something.
I love pancakes and waffles, and because I eat a lot of them, I go through a lot of maple syrup. I have tried all kinds of syrup, but I noticed that if you buy store brands, or cheapie non-brands, the flavor you get is a lot less than spectacular. I did a lot of searching, but the only way to get really tasty syrup was to pay the high dollar for name brands.
Until, I was talking to a friend of mine who is very budget minded. She told me that she didn't eat syrup herself, because she has diabetes, but she bet I could find a recipe to make my own maple syrup from scratch for a lot less money than I could buy it. Talk about a facepalm moment! I could not believe I had never thought of that on my own. So the search began. _Pancake mix or Bisquick is not necessary to make pancakes. The ingredients to make pancakes from scratch are simple items that most everyone has in their kitchen: flour, baking powder, salt, sugar, milk, eggs and butter. You don't ever have to disappoint your family again because you don't have any mix to make pancakes.
