Ingredients:
- 1/2 pound uncooked macaroni in the shape of your choice
- 3 cups shredded cheddar cheese
- 3 cups whole milk
- 2 eggs
- 1 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon powdered mustard
Directions:
Place uncooked macaroni in your crock pot
Pour 2 and 1/2 cups of cheese on macaroni
Pour milk on top of cheese
Crack eggs in bowl and beat; pour on top of cheese
Mix remaining ingredients on a small bowl and sprinkle over the top
Cover and cook on low for 2 hours, remove lid and stir.
Sprinkle remaining cheese over the top
Recover and cook for 3 more hours.
To round out this meal a bit more, I add cubed ham, green peppers and some broccoli and cauliflower florets into the mix when I stir it after it's been cooking for two hours, but this is strictly personal preference. Other items I have been known to add to this recipe are:
- sliced Italian sausage
- English peas
- chopped onions
- mushrooms
- Chicken or pork cubes
- Crumbled bacon
- meatballs
- hamburger (precooked and drained)
- dash of hot sauce
I have been known to throw in just about anything I have left over in the refrigerator. :)
Veggie Salad
Take any raw veggies that you have and chop them fairly small. Some likely candidates are:
- radishes
- peppers
- fresh mushrooms
- celery
- onion
- carrots
Put veggies in a bowl that has a lid.
Put a pinch of garlic powder on the veggies (optional)
Sprinkle sparingly with finely grated American or cheddar cheese
Sprinkle with bacon bits
Toss in some croutons
Add the dressing of your choice, put the lid on the bowl and shake to mix well
Serve immediately
The dressing I prefer is Wishbone Italian, but I have also made this with blue cheese. Both are yummy! If you want to make this salad in advance, just leave off the dressing, bacon bits and croutons and it will store for a day or two. Just add the dressing, bacon bits and croutons and shake immediately before serving.
Enjoy!
