Marshmallows are a fun thing to make. You can cut them into plain squares or any shape at all. They can build a really cute igloo! They can be colored, or decorated with sprinkles or candies or icing. They are great to build accessories for your gingerbread house. The possibilities are endless, they are like a craft that you can eat! |
- 4 1/2 teaspoons unflavored gelatin
- 3 cups granulated sugar
- 1 1/4 cups light corn syrup
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 2 cups confectioners' sugar
- cold water
Directions:
Brush a 13 x 9 pan with a heavy coat of oil and set aside
In a medium saucepan, mix the sugar, salt, 3/4 cup of water and bring to a boil, stirring until the sugar melts completely
Boil for 9 or 10 minutes, then remove from heat and set aside
Pour 3/4 cup of cold water into the mixing bowl and sprinkle gelatin into the bowl.
Leave gelatin in water for 5 minutes
Beat with and electric mixer on low and slowly add the hot sugar mixture, beating slowly until mixed
Gradually turn up the mixer to a faster setting, and beat for 10 to 12 minutes until very thick and stiff
During the last few minutes of beating, add vanilla
Pour into the oiled pan and spread evenly.
Let sit and firm up for 2 to 3 hours
Spread 1 cup of confectioners' sugar on a clean work counter that you can cut on
Turn over the 13 x 9 pan onto the confectioners sugar
Blot any excess oil
Spray a sharp knife with cooking spray and cut into squares, taking each square and rolling it in the remaining confectioners' sugar.
Place marshmallows in an air tight container. Stores well for up to a week, do not refrigerate.
