My husband has never been crazy about broccoli and cauliflower. He will eat it, but he gets this look on his face......you know the one, the "I will eat this, but I like it about as much as a root canal" look. Personally, I love cauliflower and broccoli, especially cauliflower, but the only way my hubby loves it is if it is smothered in cheese sauce, which kind of defeats the purpose. I have been wondering how I could change his mind about cauliflower.
I started looking for a really dynamite recipe that would transform this humble vegetable into something delicious that would convince my husband that cauliflower = yummy. I found some that looked really good, but they involved making a complicated sauce which could be quite a pain. I kept looking.
Ingredients:

Preheat the oven to 425 degrees
Cover a cookie sheet with aluminum foil and spray with cooking spray
Cut the cauliflower into florets then cut the florets in half, set aside
In a large mixing bowl with a tight fitting lid, mix the dry ingredients, including the cheese
Add olive oil a bit at a time while stirring, until the mixture is about the consistency of Cream of Wheat
Stir for about a minute to make sure the ingredients are well mixed
Dump the cauliflower in the bowl and put on the lid
Shake up and down, then side to side, to cover all the florets
Place the florets cut side down on the cookie sheet
Place the cookie sheet in the oven and set timer for 15 minutes
After 15 minutes, turn the florets over and place back in the over for another 15 minutes
Remove from over and serve immediately
