Quick and Easy 2 Ingredient Pineapple Cake

Today I wanted to share a quick little recipe that is one of my favorites when I need a dessert and I don't have much time.  I made this yesterday evening and we enjoyed it for dinner.  It is so simple that you can make it even if you have never baked a cake in your life!

Ingredients:

• White or Yellow Cake Mix
• 20 ounce can of crushed Pineapple in juice

Directions:

• Preheat your oven to 350 degrees
• Spray an 8 x 10 baking pan with cooking spray (glass or metal)
• In a mixing bowl put the cake mix and the pineapple with juice and stir to mix
• Pour batter into the baking pan and place in the oven
• Bake for 30 to 40 minutes until a knife inserted comes out clean.

The baking time on this cake is kind of irregular, I am not sure why.  Most of the time it is cooked perfectly at 30 minutes, but for some reason, yesterday it took every bit of 40 minutes to cook through.  That is why I always use the knife test.  I put some coconut on the top of the cake I made yesterday, see the picture above, because I love the taste of coconut with pineapple. 

Once the cake has cooled, I cut it into squares and serve with a dollop of whipped cream with a chunk of pineapple in the middle of it.  You really can put just about anything on this cake.  If you want something that is really delicious, how about pineapple glaze?  What?  You don't have a pineapple glaze recipe?  Well, let me share mine, it has only two ingredients too!

Ingredients:

• 2 cups confectioners sugar
• 4 tablespoons of pineapple juice

Just whisk together, you may have to adjust the ratio of juice to sugar,  you don't want it too thin.  I usually cut the cake into squares and then pour the glaze on, so it will seep down the cuts and there will be more glaze on each piece.  Yum!
