After you are sure that they are completely dry, place in a paper envelope and label. Store in a cool, dry place. Make sure your bean plants came from heirloom seeds and are not GMO or hybrids, because if they are, there is a good chance the seeds will not sprout.
Though my summer garden is winding down, I am still harvesting peppers on a regular basis, and I am pulling and dehydrating my leeks one batch at a time. My yellow Spanish onions are getting really big, the heads are 3 inches or more across. My third romaine lettuce crop is about 6 inches tall and I pulled two plants today, they are crisping in the sink in ice water. My third crop of radishes seem to be the slackers of the group. The greenery is getting big, but there aren't many heads. I am going to give them another week or so and see if that changes.
