In the Oven or Crockpot Apple butter is a delicious and low calorie alternative to sugary jellies and jams. I make it for my husband who has diabetes and he loves it! The worst part is the time it takes to make it, time spent stirring and stirring. It is really a pain, so I did some research and found a few ways to make it that are much easier. Not only easier, but completely sugar free! No sugar makes it's even lower in calories and more diabetic friendly. It's a win/win situation and you can make it in the oven or your crockpot.

Today I want to share with you a dish that I came up with on my own because my husband and I love potatoes and mushrooms. I am always looking for ways to combine these two winners that we love so much. I have baked them, fried them, sauteed them, and just about everything else. I came up with this recipe because it is easy and quick when I am working at home and don't want to spend a lot of time in the kitchen. I made it several times before I came up with the version that I consider to be the best.
