Directions:
Preheat oven to 350 degrees
Coat a 13 x 9 baking dish with cooking spray
With a mixer or by hand take the dry ingredients and add the coconut, pineapple, eggs, grated carrots, and vegetable oil until fully combined to make a batter.
Pour batter into the baking dish
Bake for 45 minutes or until a toothpick comes out clean
Cool for 10 minutes in the pan then turn out on a baking rack to finish cooling
Frost when completely cool.

Combine all dry ingredients in a mixing bowl
Using an electric mixer, add eggs one at a time
Add the butter and coffee and beat one minute on medium
Add sour cream and beat until batter is totally smooth
Pour batter into baking dish
Bake for 30 minutes or until a toothpick comes out clean
Remove from oven and let cool in the pan until no heat remains
When totally cool, turn out from pan and frost
Coat a 13 x 9 baking dish with cooking spray
Combine all dry ingredients in a mixing bowl
Using an electric mixer add the shortening and buttermilk, beat for 3 minutes
Add eggs and beat for 2 more minutes
Pour batter into baking dish
Bake for 30 minutes or until a toothpick comes out clean
Let cool in the pan for 15 minutes and then turn out to finish cooling
When completely cooled, frost or apply glaze.
