I noticed today that the fruit selection was a bit thin. As a result, I got more veggies. I hope this changes as it gets warmer.
I decided to try a mango, I have never had one, but my husband likes them. I substituted some red potatoes for a bunch of swiss chard. I have a crop of microgreens maturing on Monday, and I still have some kale and lettuce, so they were not needed.
My husband gave the thumbs down to their Bartlett pears, so I traded them out for a Portabella mushroom, I have always wanted to try grilling one!
The pasta with kale that I made earlier this week was really delicious! I was amazed at the flavor that it retained, even after cooking. It really complimented the tomato sauce. Even my husband, who is not crazy about putting what he calls "weird stuff" in his casseroles, was impressed with the taste of "that green stuff" in the mostaccioli.
That, ladies and gentlemen, is what I call a success in the move toward eating healthier!
